We serve local rakfisk (fermented trout) from Tinn, made from wild fish caught on the Hardangervidda plateau. The fish has a beautiful red color and a wonderfully soft texture.
It is served with all the classic accompaniments: potato flatbread (lefse) and crispbread with butter, red onion, sour cream, chopped egg, and pickled beetroot.
Price: NOK 365 per plate.
